A really easy Chicken satay.
Main - Ingredients
1 tablespoon of red curry paste
3 large chicken breast fillets chopped
2 tablespoons of crunchy peanut butter
400ml can of coconut cream (or tub of cream or lactose free cream)
Handful of beans
Handful of peanuts
In a non-stick frying pan, heat the red curry paste
In same pan, brown chicken stirring to cook evenly.
Add in the peanut butter and cream, stir to combine.
Reduce heat and simmer until chicken is cooked through.
Add vegies of your choice e.g. beans & red capsicum.
Sprinkle peanuts on top
Serve on a bed of rice.
